Spicy Roasted Cauliflower Stir-Fry

This spicy cauliflower stir-fry was seriously the most addicting thing I’ve ever eaten. I had a hard time saving enough of it to even take a picture. I definitely didn’t include everything – I was trying to be resourceful and use ingredients I had around the house. I also didn’t serve it with a side dish – I tried to make quinoa but for some reason that failed miserably. It was delicious on it’s own however! Here’s what you’ll need:

1 head of cauliflower, cut into florets
4 tbsp vegetable oil, divided
salt and pepper
6 slices fresh ginger
1 small onion, thinly sliced
5 cloves garlic, sliced
2 scallions, cut into 2 inch lenghths (I used chives, not the same!)
1/2 tsp crushed red pepper flakes (this is optional, but highly recommend)
1 tsp toasted sesame oil
2 tbsp rice wine or dry sherry
1 1/2 tbsp soy sauce
1/4 tsp sugar


Preheat your oven to 450 degrees and line out the cauliflower in a single layer. Toss with oil, salt, pepper and roast until crisp and golden. I’m not sure if I have a terrible oven or not, but mine was QUICK to roast, so I would keep an eye on it. Stir up the cauliflower like half way – also a good way to check on them 🙂

While your cauliflower is roasted, heat up oil in your wok. (OK Side note: I don’t have a wok. I don’t think a wok is necessary. Not even sure how to use a wok. I just used a regular skillet and I think it got the job done) Add the ginger and cook until it’s caramelized then add the onion and garlic and cook until they’ve softened.


Turn up the heat to high, add your cauliflower and scallions. Cook for 30 seconds and then add the red pepper flakes, sesame oil, rice wine, soy sauce and sugar. Toss everything together and then stir-fry for about 1 minute. I would recommend mixing the wet ingredients for the sauce together ahead of time, that way all the flavors can mix in with the veggies without burning any of it off while you wait to add ingredients 🙂


Serve with some rice or other veggies, your preference!

Again, this was seriously addicting. I had to actively stop myself from eating the entire bowl. I would like to add more veggies in and make it a true stir-fry but it was spicy, warming, and was so satisfying. Absolutely loved it. Need to make like triple batches next time!
