Lately, I have been trying to have a nice mini brunch every Sunday morning. I don’t think there’s anything better than having a house full of yummy breakfast smells – what’s a better way to wake up!? However, making brunch for a vegetarian can sometimes get tricky – no bacon?! no ham?! so sometimes you just have to jazz up some old favorites. For this week, I put a healthy spin on chocolate chip pancakes! Here’s what you’ll need:
1/2 cup white whole wheat flour
1/2 cup unbleached all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
1/2 cup unsweetened applesauce
1 cup unsweetened almond milk
3 large egg whites
2 teaspoons vegetable oil
1 teaspoon vanilla extract
1/4 cup chocolate chips
First, you need to mix up your dry ingredients – the flours, baking powder, and salt. In another bowl, mix together your wet ingredients (applesauce, milk, egg whites, oil and vanilla). Slowly mix your wet ingredients to the dry ingredients until it is completely combined but not overly mixed. Then, heat up a non-stick griddle, spray the pa, and then scoop out about 1/4 cup portions of your pancake batter.
At first, i just topped the batter in the pan with the chocolate chips, but found that was just too messy and didn’t help them cook at all, so then i just combined the chips in the batter.
Cook on either side until the side bubble up and start to set. Flip until your liking, top with some butter and maple syrup, and you’re ready to enjoy 🙂
These were pretty delicious pancakes. They tasted delicate even though they were overall a healthy version of pancakes for you. Adding the applesauce and using wheat flour in conjuction with regular flour, it helped cut down on the overall fat content in the dish. It was a perfect little bite to end my weekend 🙂
