Pumpkin Roll!! :)

Thanks to my boyfriend’s wonderful mother, I was able to make the best delicious fall treat that has ever happened to the world. This pumpkin roll was AMAZING. It was relatively easy to make as well so here’s what you’ll need:

3/4 cup flour
1 cup sugar
2 tsp ground cinnamon
1/2 tsp nutmeg
1 tsp ginger
3 eggs
1 tsp lemon juice
2/3 cup pumpkin puree

1 package cream cheese (8 oz)
1/4 cup butter
1 cup powdered sugar
1 tsp vanilla


Combine all of the filling ingredients and then spread in your jelly roll pan evenly lined with parchment paper. I ended up using a non-stick silicone sheet which worked GREAT. Heat your oven to 375 and then put in the oven for 12-14 minutes. While it’s cooking, line a towel and sprinkle sugar all over it. Make sure to be liberal with the sugar so that it doesn’t stick to the towel.

Once it’s baked, take off your sheet/parchment paper and flip upside down onto your sugared towel. Roll up your bread while it’s still warm and then let cool COMPLETELY. This will make it easier to spread your filling.

While it’s cooling, you can start to make your filling. Combine your ingredients and put aside until the bread has cooled. Once cooled, spread your filling on the bread evenly and then roll it back up, wrap in foil, and freeze until its ready to eat!!

THIS IS AMAZINGGGG. Seriously, the best thing you could probably make all fall season. It has the wonderful warming spice from the nutmeg, cinnamon and ginger, with that DELICIOUS cream cheese filling. Once you freeze it, it not only makes it easier to cut, but easier to eat 🙂 It just combines all those flavors so well and it’s literally so addicting. Seriously, do you, your family and loved ones a favor and make this roll.
