Save the boobies! 

Recently, a coworker and friends mother just went through a double mastectomy surgery and it was both physically and emotionally draining. I have always been a big supporter of breast cancer research so I really felt for her. In an attempt to help sweeten the whole ordeal, I decided to make some girl power cupcakes! I went to my girl Giada for some ideas and here’s what you’ll need for her Raspbery Cream Cupcakes:

1 (18.25 oz) box of white cake mix (recommended Duncan Hines moist deluxe)

1 1/3 cups water

3 large eggs

2 tablespoons unsalted melted butter

2 teaspoons almond extract

2 teaspoons vanilla extract 

12oz container raspberries 

1 cup heavy whipping cream

1/3 cup powdered sugar 

  
First, you need to preheat the oven to 350 degrees. Then, start making your batter. Combine the cake mix (follow instructions on the back of the box) with the water, egg whites, melted butter, almond extract, and vanilla extract for about 2 minutes. Then you’re ready to scoop into your prelined cupcake pan. Use about 1/3 scoop per cupcake. 

       
   

 
Bake those in the oven per box instructions. Then, you can start on work on your raspberry cream. Beat the heavy cream and powdered sugar until stiff peaks form. Mash up the raspberries and then fold into the whipped cream. 

    
   

 
Once the cupcakes have finished baking and have cooled completely, you’re ready to start assembling. Remove them from the papers and then cut the tops off of each cupcake. Using a serrated knife works best. Spoon the raspberry scream on top of the cupcake bottoms. Put the top back on and sprinkle with powdered sugar! Enjoy! 

    
   
These were delicious!! The almond extract was definitely front and center. The cake stayed moist and the raspberry cream was so light and airy. It made for such a delicious bite. I had a little trouble with the powdered sugar dusting so I tried to use some of the extra cream to help it stick, but that unfortunately didn’t really help either. (I think it was more user error than anything) but still super delicious!!! Would love to try again with different flavors.
