Vegetable Detox!

Well I tried yet again to get into a healthy eating lifestyle. I didn’t last long, but I lasted long enough to make a delicious vegetable soup! It was a rainy day and I was really feeling like eating something comforting. My idea of comfort food is a big bowl of soup and what better way to enhance that than to add a ton of veggies! Here’s how you make the Vegetable Detox soup:

1 tbsp olive oil
1 yellow onion
1 carrot
2 celery ribs
1 red bell pepper
4 garlic cloves
2 cup green beans
28 oz. diced tomatoes
4 cup vegetable stock
1.5 tsp dried oregano
1 teaspoon dried basil
1/2 tsp dried thyme
1 teaspoon sea salt
1/2 teaspoon black pepper
4 cup kale
2 tbsp fresh parsley

Seems like your average 100 ingredient meal, but it was actually pretty simple. First, you’ll need to cut up your onion, celery, carrot and garlic and cook everything but the garlic in a pan until translucent. Try to cut everything around the same size so that they cook evenly. Once they are cooked down, add the garlic and bell pepper and continue cooking. Top with the diced tomatoes, vegetable stock and spices. A quick shortcut for the spices are you can buy the can of diced tomatoes already mixed in with the three main spices, and it makes your life a little easier! (but i added more spices anyway including red pepper flakes obviously)

Once you have everything mixed in, bring to a boil and then let simmer for 25 minutes on low heat (uncovered). Then, you’ll want to add your kale and cook for about five minutes just to wilt all the kale down. Top with fresh parsley and enjoy!

So this soup was super delicious – very hearty yet light. It definitely tasted healthy but of course had a wonderful flavor from the red pepper flakes. It had a ton of yummy veggies so it definitely filled you up fast! Great sick day soup 🙂
