Sunday Morning Muffins!

There are very few things better than delicious muffins on a Sunday morning. After buying fresh blueberries, I decided to make some delicious Blueberry muffins for everyone to wake up to this morning. Super simple recipe and they tasted fantastic! Here’s what you’ll need to make a simple breakfast that can quickly become a staple in your house:

1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries

Crumble Topping
1/2 cup white sugar
1/3 cup all purpose flour
1/4 cup butter, cubed
1 1/2 teaspoon ground cinnamon


To start your batter, mix together the flour, sugar, salt, and baking powder until they are fully mixed together. Then, in a 1 cup measuring up, mix together vegetable oil, egg, and milk and then mix into the batter. Once it is mixed into the batter, fold in the blueberries and then put aside while you make your crumb topping.


To make the crumb topping, mix together the sugar, flour, butter and cinnamon until it gets crumbly. I melted the butter a little bit because my butter was cold, and that helped crumble it all up together.

Now, you are ready to assemble your muffin and bake! Fill up your muffin tin and top each one with a little bit of the crumble. Bake at 400 for about 20-25 minutes and enjoy!

They were super delicious – crispy outside but still moist on the inside. The blueberries melted on the inside and gave a nice little burst of flavor. The crispy topping gave a nice little sweetness and extra yummy goodness on top of the muffin that definitely made them “to die for” 🙂
