Chile-And-Olive-Oil-Fried-Egg with Avocado & Sprouts-And-Lots-of Dashes

So breakfast is boring. It’s hard to balance good flavor with healthy things and I can never figure out where to put the banana and what exactly is a steel cut oat? Well I decided to forget trying to dissect breakfast and just make an egg. But then of course I couldn’t just make an egg could I? So now here we have our Chile and Olive Oil Fried Egg dish! What makes it perfect is that it basically has everything delicious ever, so here’s what you’ll need:

1 cup of sprouts (can basically be any type of sprout you feel like eating)
1 teaspoon fresh lime juice
salt & pepper
2 tablespoon olive oil
2 large eggs
crushed red pepper flakes
2 sprouted grain tortillas or flatbreads (I just used regular whole grain)
1 oz. feta
avocado slices and lime wedges

First, you need to heat up your pan and get your oil super hot. Once it’s hot, you’ll want to drop your egg in and cook until the edges start to crisp up. While your egg is cooking, you can start to prep your sprouts and tortilla! Which is bascially just tossing them in lime juice and toasting the tortilla.

Once your egg is cooked, then you can start prepping your yummy dish! With the excess olive oil in the pan, put the chili flakes and create like a little chili oil. First, put the sprouts on top of the tortilla then top with the egg, feta cheese, avocado, hot sauce and drizzle with the chili oil.

It was super delicious and had a wonderful little kick from the hot sauce. The avocado cut into the heat a little bit which helped balance the flavors. The bite with the runny yolk was so buttery and rich that it really brought the whole dish together. It was super good and i would love to experiment with different styles of cuisine to elevate this dish! It’s also boyfriend approved, so definitely worth making! 😉
