What happens when you love food too much?

You’re forced to pick your recipes from the Weight Watcher’s section of the cookbook. Healthy eating sounds boring. No salt, less fat, watch your calories, small portions. Well your waistline will thank you after eating this not only healthy, but delicious meal as well! I know..how can healthy be delicious? Well this Tortellini Tomato Spinach Soup makes it easy! Here’s what you’ll need:

1 (9 oz) package fresh tortellini or dried tortellini
1 (14 oz) can whole tomatoes, coarsely chopped
10 ounces fresh spinach (or frozen)
1 tablespoon olive oil
4-6 cups vegetable broth
1 garlic clove, minced
1/2 cup minced onion (like half of a small onion)
1/4 cup freshly grated parmesan cheese (optional)
salt, to taste
pepper, to taste

Not only is this a surprisingly delicious healthy meal, it’s also super simple to make! Great meal to make after a long day of work. First, you need to chop your onions and garlic while a pan is heating on the stove with olive oil. Then, start to cook the onions and garlic on low heat until the onions are “translucent” (about 5-7 minutes)

Once the onions have cooked, you will need to add the tomatoes and vegetable broth (I used 6 cups).

If you want more of a tomato taste, don’t drain your tomatoes and keep some of those juices. Put this on high heat and bring to a boil. Once this is boiling, add the tortellini and cook via instructions. For mine, it said to cook about 2 minutes.

I just used plain cheese tortellini found at the grocery store, but there are all sorts of different stuffed ones if you want to jazz up the dish a little. Once the pasta is almost finished cooking, add the spinach with some salt and pepper.

Cook until all the spinach is cooked down and then you are ready to serve and enjoy! Top with some parmesan cheese and you’re all set!

As I mentioned earlier, this was a healthy dish that actually tastes great. It could probably use some more salt, but that is definitely a personal preference. You could add different types of tortellini to keep it interesting, but I was happy with just the cheese. As always, it could use a little heat, so next time I might add some red pepper flakes! Literally my favorite ingredient :-). i would recommend for anyone trying to keep up with their diet – it was light yet satisfying! Serve with maybe some french bread or a crostini and you’ll be all set! (Only 6 WW Points, by the way!)
